PublicationWykazano, że termofilna bakteria Thermus ruber jest źródłem syntazy trehalozy,katalizującej wewnątrzcząsteczkową transglikozylację maltozy. Wymieniony enzym przejawia największą aktywność w temp. 65 st. C przy pH 6,5. Najlepszą wydajność syntazy trehalozy uzyskiwano podczas hodowli bakterii w 55 st.
