Zastosowania chromatografii wykluczania (GPC/SEC). Część II – Wykorzystanie GPC/SEC w rozdzielaniu tłuszczów i produktów ich konwersji – artykuł przeglądowy
Abstract
Tłuszcze i produkty ich konwersji stanowią złożoną grupę związków organicznych, o różnorodnej i skomplikowanej strukturze. Istotnym problemem, zwłaszcza w rozdzielaniu szczegółowym tak złożonych i zróżnicowanych analitów na poszczególne indywidua chemiczne jest ogromna różnorodność budowy związków chemicznych przynależnych do poszczególnych klas lipidów. Z drugiej strony, poszczególne klasy lipidów wykazują charakterystyczne cechy pod względem swoich właściwości fizykochemicznych, w tym, pod względem oddziaływań sorpcyjnych, co umożliwia ich rozdzielanie grupowe. Uzyskanie właściwego rozdzielenia związków lipidowych na grupy warunkuje możliwość ich dalszego rozdzielania oraz prawidłową identyfikację poszczególnych związków chemicznych występujących w danej grupie. Niniejsza praca przeglądowa przedstawia współczesny stan wiedzy opisany w literaturze, dotyczący jednej z szeroko stosowanych technik wstępnego rozdzielenia grupowego tłuszczów oraz produktów ubocznych ich rafinacji lub konwersji, tj. chromatografii wykluczania (ang. GPC/SEC, Gel Permeation Chromatography/Size Exclusion Chromatography).
