TASTE QUALITIES ESTIMATION BY TASTE SENSE AND ELECTROCHEMICAL SENSORS

Abstract

The principles of taste sense and kinds of tastes (sweet, salty, sour, bitter, umami and fat) have been described. Food quality estimation by taste sense: organoleptic testing and sensory analysis has been presented. The principle of operation of potentiom etric sensor composed of several Ion Selective Electrodes or All Solid State Electrodes with polymeric membranes and macromolecular chemical compounds sensitive to substances responsible for taste has been described. The voltammetric taste sensor composed of metal working electrodes, reference and auxiliary electrodes together with voltammetric measuring techniques and its application for discrimination of different kinds of commercial drinks (e.g. wine, coffee, soy sauces, milk, sake, lemonade) have been p resented. Commercial versions of potentiometric taste sensors constructed by Japanese companies Anritsu Corp. and Insent Intelligent Sensor Technologies Inc. were depicted. It should be noted that voltammetric taste sensor has not been commercially applied for evaluation of taste of food.
