Abstract

Zbadano wpływ składu emulgatorów acylopropylenoglikolowych, modyfikowanych mydłami cynku, na charakter przemian strukturalnych jakim ulegają emulsje W/O stabilizowane przez takie emulgatory. Badano zarówno etap emulgowania jak i mikrostrukturę oraz właściwości reologiczne otrzymanych emulsji.
