PublikacjaCelem pracy była enzymatyczna modyfikacja folii otrzymanych z żelatyny rybnej. Źródłem żelatyny były surowe i wędzone skóry łososia. Stwierdzono, że czas żelowania roztworu żelatyny ulegał skróceniu w obecności transglutaminazy w badanym zakresie 0,1-0,2 mg/ml.
