PublicationTermofilna bakteria Thermus ruber wytwarza syntazę trehalozy użyteczną do jednoetapowego przekształcania maltozy w trehalozę. Enzym ten wykazuje największą aktywność w temperaturze 65 C przy pH 6,5. Największą wydajność wytwarzania enzymu osiągano podczas hodowli drobnoustroju w temp. 55 stC w podłożu zawierającym 0,5% peptonu,0,1% ekstraktu drożdżowego oraz 0,% maltozy lub skrobi.

PublicationCelem pracy było określenie wrażliwości gramujemnych i gramdodatnich bakterii na działanie ciśnienia 193MPa w temp. -20°C w obecności lizozymu lub nizyny. Stwierdzono, że połączone działanie ciśnienia i badanych substancji przeciwdrobnoustrojowych na zawiesiny bakterii Escherichia coli i Staphylococcus aureus powodowało większy stopień inaktywacji komórek niż suma efektów wywieranych przez pojedyncze czynniki.

Ocena przydatności bakterii Thermus ruber jako źródła syntazy trehalozy
PublicationWykazano, że termofilna bakteria Thermus ruber jest źródłem syntazy trehalozy,katalizującej wewnątrzcząsteczkową transglikozylację maltozy. Wymieniony enzym przejawia największą aktywność w temp. 65 st. C przy pH 6,5. Najlepszą wydajność syntazy trehalozy uzyskiwano podczas hodowli bakterii w 55 st. C na podłożu zawierającym 0,5% peptonu 0,1% wyciągu drożdżowego i 0,5% maltozy lub skrobi.

PublicationZawartość nadtlenków w wędzonych makrelach była o 50% mniejsza, a liczba anizydynowa 2,5 razy większa niż w surowych rybach. Przechowywanie ryb wędzonych w temp. +2C nie wpłynęło na zawartość produktów utlenienia lipidów. Zawartość dostępnej lizyny była podobna w surowych i wędzonych rybach. Skóra ryb wędzonych zawierała 2 razy więcej fenoli niż tkanka mięśniowa.
