PublicationKomórki rekombinantowej Escherichia coli transformowane genem beta-galaktozydazy z Pyrococcus woesei wykorzystano jako biokatalizator syntezy galaktozylofruktozy. Największą aktywność syntezy wymienionego prebiotyku (7,6 g/L x godz)uzyskano w 80C przy pH 5,4, stosując jako substrat roztwór zawierający 10% laktozy i 20% fruktozy. Aktywność transgalaktozylacji nie ulegała istotnym zmianom podczas sześciu kolejnych szarż produkcyjnych.
