Otrzymana rekombinantowa alfa amylaza wykazuje maksymalną aktywność przy pH 5.6 w temperaturze 95 stC i przejawia około 24 % początkowej aktywności nawet po 2 godz. inkubacji w 120 stC. Duża termostabilność otrzymanego preparatu świadczy o jego przydatności do enzymatycznego upłynniania skrobi.
