PublikacjaBadano właściwości fizyczne (zawartość fazy stałej i charakterystyki topnienia) trójskładnikowych mieszanek zawierających obok masła kakaowego, tłuszcz mleczny oraz frakcję łoju o wąskim zakresie topienia. W porównaniu z tłuszczem mlecznym, frakcja łoju w mniejszym stopniu ograniczała powstawanie formy beta oraz obniżała zawartość fazy stałej w mieszance.
