Factors affecting the deacetylation of chitosans by chitin deacetylase from Mucor rouxii.
PublikacjaCelem pracy było określenie przyczyn niecałkowitej enzymatycznej deacetylacji chitozanu. Wykazano, że w trakcie reakcji prowadzonej w stosunkowo stężonych roztworach chitozanu, aktywność deacetylazy chityny była hamowana przez obydwa produkty deacetylacji: kwas octowy oraz chitozan ze zmniejszającym się stopniem deacetylacji.
