Hydroliza prowadzona była w obecności lipazy trzustkowej, w warunkach stymulujących proces trawienia. Stwierdzono, że olej rzepakowy hydrolizowany jest znacznie szybciej niż strukturyzowane lipidy z kwasem behenowym.
