Przechowywanie ryb wędzonych w temp. +2C nie wpłynęło na zawartość produktów utlenienia lipidów. Zawartość dostępnej lizyny była podobna w surowych i wędzonych rybach. Skóra ryb wędzonych zawierała 2 razy więcej fenoli niż tkanka mięśniowa.
