PublicationZawartość nadtlenków w wędzonych makrelach była o 50% mniejsza, a liczba anizydynowa 2,5 razy większa niż w surowych rybach. Przechowywanie ryb wędzonych w temp. +2C nie wpłynęło na zawartość produktów utlenienia lipidów. Zawartość dostępnej lizyny była podobna w surowych i wędzonych rybach. Skóra ryb wędzonych zawierała 2 razy więcej fenoli niż tkanka mięśniowa.
