PublicationBadania nad przeciwutleniającymi właściwościami wybranych warzywnych produktów spożywczych prowadzone były przy użyciu testu ABTS i testu kometkowego. Wykazano, że spośród badanych produktów najwyższą aktywność przeciwutleniającą wykazywał koncentrat buraczany oraz kiszona kapusta.
