PublikacjaW pracy określono przeżywalność bakterii Escherichia coli i Staphylococcus aureus oraz naturalnej mikroflory soku jabłkowego i rozdrobnionego mięsa świńskiego po działaniu ciśnienia 193 MPa w temp. -20 C w obecności chitozanu.
