  W pracy dokonano przeglądu metod oznaczania indeksu fazy stałej (SFI - solid fat index) oraz zawartości fazy stałej (SFC - solid fat content) w tłuszczach. Obok metody NMR, obecnie powszechnie stosowanej i zalecanej przez normy, przedstawiono też inne metody analityczne które stosowano, lub stosuje się do tego typu analiz.
