PublikacjaPorównywano przebieg enzymatycznej hydrolizy oleju rzepakowego i strukturyzowanych lipidów zawierających kwas behenowy (C22:0). Hydroliza prowadzona była w obecności lipazy trzustkowej, w warunkach stymulujących proces trawienia.
