  • Bacterial cellulose vs. bacterial cellulose nanocrystals as stabilizer agents for O/W pickering emulsions
    Publication

The growing interest in Pickering emulsions in functional food systems resulted in the need to find suitable stabilizers for them. The work considers the use of bacterial cellulose for this purpose, and its aim was to compare the properties of disintegrated bacterial cellulose, before and after freeze-drying, and its nanocrystals obtained using H2SO4 under variable of time and concentration conditions. The structure of nanocrystals...

  • Chemical Characteristics and Thermal Oxidative Stability of Novel Cold-Pressed Oil Blends: GC, LF NMR, and DSC Studies
    Publication

    - Foods - Year 2023

Plant oils contain a high content of unsaturated fatty acids. Studies of food products have revealed a considerable disproportion in the ratio of ω6 to ω3. This article presents information on the healthful qualities of eight new oil blends that contain a beneficial proportion of ω6 to ω3 fatty acids (5:1), as well as their degradation during heating at 170 and 200 °C. The fatty acid profile was analyzed by gas chromatography (GC),...

  • Saccharides
    Publication

    - Year 2023

Saccharides are widely distributed in nature as the major component of fruits and vegetables (primarily monosaccharides), milk and malt (mainly disaccharides), and grains (mostly polysaccharides). They are an important source of energy, structural material, as well as flavor and taste factors. Molecules of this class of compounds contain mainly carbon, hydrogen, and oxygen atoms; however, most natural saccha- rides do not have...

  • Antimicrobial properties of chitosan solutions, chitosan films and gelatin-chitosan films
    Publication

The antimicrobial properties of chitosan solutions and films against selected bacteria and the effect of chitosan incorporation into gelatin films were studied. The bactericidal effect of chitosan solutions increased with time and temperature of sample incubation. Two psychrotrophic strains Pseudomonas fluorescens and Listeria innocua were more sensitive to chitosan than mesophilic strains Escherichia coli and Staphylococcus aureus....

  • Kinetics and mechanism of the chemically modified starches during gelatinization.
    Publication

    - Year 2013

Native starch was silicated by means of microwave-assisted reactions with varying doses of reagents. Resulting products were characterized by DSC and HMR-relaxation methods. It was observed that the hydratation of the silicated starches during gelatinization decreases when compared to that of the native potato starch. The amount of unfrozen water for ungelitinizated silicated starches are less than in control samples. At the same...

  • Rheology of potato starch chemically modified with microwave-assisted reactions
    Publication

    - LWT-FOOD SCIENCE AND TECHNOLOGY - Year 2013

Native potato starch was sulfated, selenated, borated, silicated and zincatated by means of microwave-assisted reactions with varying doses of relevant reagents. Resulting products were characterized involving rheological behavior of pastes, their weight-average molecular weight (Mw), and radius of gyration (Rg). Most of the pastes showed shear-thinning behavior, with the flow behavior index (n) below unity. The pastes of starch...

  • Functional properties of edible films for food applications - a review
    Publication

Application of natural polymers to forming edible films for food applications has been reviewed. Due to the hydrophilic nature of proteins and polysaccharides, films prepared from these polymers are too susceptible to moisture. Modification of them with critically selected a suitable compounds can result in their improved functional properties and making them useful for food packaging.

  • Starch-clay nanocomposite films
    Publication

Starch is a natural polymer which, due to its renewability, biodegrability, availability and a relatively low cost, has a high potential for applications in biodegradable materials. However, because of its hydrophilic nature, the number of commercially available starch-based products is still limited. Recently, starch-based nanocomposites with the addition of clay minerals as nanofillers have given rise to large-scale improvements...

  • Synthesis and characterisation of starch cuprate
    Publication

The cupration of granular potato starch with ammonium tetrachlorocuprate(II) was performed by a 20 min lasting microwave-assisted process and by 40 min convectional heating. In both cases the degree of esterification (DE) did not exceed 0.0064. A higher dose of cuprate had a positive effect on DE, regardless of whether the microwave irradiation or the convectional heating was applied, and on the thermal stability of the starch...

  • Functional properties of packaging materials from chemical modified stach.
    Publication

This work is focused on study of the mechanical and barrier properties of films obtained from potato starch modified with sodium tetrahydroxozincate generated in situ. The results show that the chemical modification of starch improved the water vapor permeability by about 25%, unfortunately decreased the elongation at break by 60%, when compared with unmodified starch films. However, placitization of films with glycerol at a concentration...

  • Microwave-assisted preparation of potato starch silicated with silicic acid
    Publication

    - CARBOHYDRATE POLYMERS - Year 2010

Application of microwave irradiation for the silication of granular potato starch with silicic acid, and the properties of silicated starch were investigated. Potato starch was esterified on 20 min microwave irradiation of starch with silicic acid, applying the power of 450 or 800Wand, for comparison, on 120 min convectional heating of the reagent blend at 100 ◦C. The degree of esterification and the reaction efficiency did not...

  • Microwave-assisted synthesis of zinc derivatives of potato starch
    Publication

    - CARBOHYDRATE POLYMERS - Year 2010

Zincatated potato starch was prepared in a solid-state, microwave-assisted reaction using generated in situ sodium tetrahydroxozincate [Na2Zn(OH)4]. For comparison, zincatation of starch was also carriedout on convectional heating. Depending on the irradiation conditions, the products of either mono- or crosslinking esterification were formed. Higher power applied at shorter exposition offered products ofmonoesterification, and...
