Porównanie przebiegu enzymatycznej hydrolizy oleju rzepakowego świeżego, ogrzewanego oraz jego polarnej i niepolarnej frakcji
PublicationPorównano przebieg enzymatycznej hydrolizy oleju rzepakowego świeżego i ogrzewanego w temp. 185 st. C przez 2,5 h oraz frakcji niepolarnej i polarnej, wyizolowanej z oleju ogrzewanego. Hydroliza prowadzona była w obecności lipazy trzustkowej, w warunkach symulujących proces trawienia. Stwierdzono, że olej rzepakowy ogrzewany oraz jego frakcja polarna i niepolarna hydrolizowane są wolniej niż olej świeży.
