PublikacjaCelem pracy było określenie wrażliwości gramujemnych i gramdodatnich bakterii na działanie ciśnienia 193MPa w temp. -20°C w obecności lizozymu lub nizyny. Stwierdzono, że połączone działanie ciśnienia i badanych substancji przeciwdrobnoustrojowych na zawiesiny bakterii Escherichia coli i Staphylococcus aureus powodowało większy stopień inaktywacji komórek niż suma efektów wywieranych przez pojedyncze czynniki.

PublikacjaBadano wpływ temperatury w zakresie 160 - 190 C na przemiany termooksydatywne tłuszczów smażalniczych. Miarą degradacji tłuszczu była zmiana jego lepkości. Stwierdzono, że wzrost temperatury i czasu smażenia powoduje wzrost lepkości tłuszczu. Szybkość tych zmian była różna dla różnych surowców tłuszczowych. Sezonowe zmiany opadalności osadu związane są ze zmianami temperatury oraz zmianą składu populacji bakterii osadu czynnego (bakterie nitkowate).
