PublicationZbadano właściwości modelowych emulsji W/O, stabilizowanych emulgatorami acyloglicerolowymi, modyfikowanymi karboksylanami cynku. Przedstawiono wyniki mikroskopowej, konduktometrycznej i kalorymetrycznej analizy wpływu składu i stężenia emulgatora oraz zawartości fazy wodnej na wielkość kropel fazy rozproszonej emulsji i stabilność układu dyspersyjnego.
