PublicationCelem pracy było opracowanie metody umożliwiającej określenie stabilności oksydatywnej oleju rzepakowego na podstawie analizy lotnych produktów utleniania lipidów. Na etapie opracowywania metody dobrano optymalne parametry ekstrakcji lotnych analitów techniką SPME. Przeprowadzono również elementy walidacji tej procedury. PublicationZawartość nadtlenków w wędzonych makrelach była o 50% mniejsza, a liczba anizydynowa 2,5 razy większa niż w surowych rybach. Przechowywanie ryb wędzonych w temp. +2C nie wpłynęło na zawartość produktów utlenienia lipidów. Zawartość dostępnej lizyny była podobna w surowych i wędzonych rybach. Skóra ryb wędzonych zawierała 2 razy więcej fenoli niż tkanka mięśniowa.
