PublikacjaBadano wpływ temperatury w zakresie 160 - 190 C na przemiany termooksydatywne tłuszczów smażalniczych. Miarą degradacji tłuszczu była zmiana jego lepkości. Stwierdzono, że wzrost temperatury i czasu smażenia powoduje wzrost lepkości tłuszczu. Szybkość tych zmian była różna dla różnych surowców tłuszczowych.
