PublicationPrzeestryfikowano mieszaninę oleju palmowego i rzepakowego (6:4) w obecności katalizatora Novozym 435. Parametrem zmiennym był czas trwania reakcji (1-6 godz.). Stwierdzono, że w zastosowanych warunkach reakcji biokatalizator był niespecyficzny, ponieważ w pozycjach sn-2 produktów reakcji zaobserwowano istotne zmiany składu kwasów tłuszczowych.
