Stwierdzono, że wzrost temperatury i czasu smażenia powoduje wzrost lepkości tłuszczu. Szybkość tych zmian była różna dla różnych surowców tłuszczowych. Na bazie przekształcenia falkowego zaproponowany został parametr charakteryzujący zaatakowanie wżerowe.
